It’s getting cold here in Canada, and we just had our first snowfall.
‘Tis the season to get warm, and a soup with these local fall ingredients will go along way in being healthy.
This soup will strengthen and tonify the immune system, and, provide exceptional nutrients for your liver.
The liver is an overworked organ, and it really appreciates a “boost” every now and then.
If you can’t find burdoch roots, or astragalus, you can substitue dandelion and red clover.
Or, what herbs grow naturally in your neighbourhood?
These plants growing beneath our feet are usually the nutrients we need to consume.
Hope you enjoy the recipe, and even if you don’t have the ingredients,
maybe next time you are out shopping, you will set the intention to pick up a few,
and “try” that weird recipe from Annettes Health Action. ( I believe this recipe came from one of the Alive Zoltan Rona books, so I am simply “paying it forward”.)
GOOD FOR YOUR LIVER -SOUP
8 cups water
1 Tbs. Olive oil
1 large onion, diced
2 large beets, diced
3-4 tomatioes, diced
1 bulb garlic, minced
1-1 1/2 inch piece of ginger root, peeled and finely chopped.
1 cup burdoch roots (yes local farmer’s, burdoch root benefits the lymphs, stomach, liver, joints, +more)
1 bunch sliced kale or beet greens
5 slices dried astragalus root.( removed after soup is made)
1 whole reishi mushroom (removed when done)
1/2-1 cup spirulina (begin with less if you haven’t used this before.)
celery seed, turmeric, and tamari to taste.
Combine water and all ingredients in a large pot, bring to boil, and reduce heat.
Simmer for 2-3 hours, until vegetable are soft.
(The extra simmering time extracts the nutrients from the roots also).
Season to taste with celery seed, tamari, turmeric. Eat as desired throughout the day.
This soup is both cleansing and nourishing at the same time.
A Healing Soup for the Body and Soul.
